Course Objectives

To teach the chemical properties of nutrients, including macronutrients such as carbohydrates, proteins, and fats, as well as components like enzymes, pigments, and flavor compounds, and to understand the changes that occur in these properties during production and consumption processes; to grasp relevant methods and to develop recommendations for healthy nutrition

Course Content

Solutions and colloidal systems; the structure, classification, chemical and functional properties of carbohydrates, proteins, and fats; the structure and classification of enzymes, their presence in foods, and their applications in the food industry; the properties and functions of pigments, as well as flavor and aroma compounds

There is no pre-registration.
