Course Objectives

The objectives of this course are to be able to prepare basic desserts; be able to prepare sponge cake; pan de Spain cake types; be able to prepa re creaming; be able to prepare laminated, tart, cookie, choux doughs; be able to prepare custards, crème patisserie; be able to understand fermen ted dough basics. Upon successful completion of this course, students will be able to work in Pastry section of kitchen

Course Content

In this course, it is aimed to introduce and prepare students to use the equipment and materials in a pastry kitchen in a professional sense. In a ddition, the place of pastry in classical kitchen sections, basic cooking methods and preparations, learning the basic pastry methods are among the objectiv es of the course. By practicing basis of pastry products, this course aims to create a practical manner of global patisserie production.
